Bigger fish to fry!
This year’s summer is proving to be a complete washout. In fact, it’s the worst one I can remember. I can’t change the weather or promise it’s going to get any better but I can bring you a little bit of sunshine in the shape of this summery sea bass supper. With zesty lemon and olive oil drizzle, sauteed potatoes and wilted baby spinach it’s the perfect summery supper, even if you need to eat it in front of a daylight lamp with the heating cranked up to avert SAD setting in. It’s quick to make, really tasty and won’t break the bank!
Enough for 2:
4 Sea bass Fillets
2 Tablespoons of good olive oil
1 Tablespoon of Lemon Zest
Small palmful of chopped flat leaf parsley
2 potatoes (preferably red)
Couple of handfuls of baby spinach
